Raw Jackfruit Shimpkapuri Kababs

Ingredients:

For Paste:
  • 1 – Wakao Raw Jack
  • 1tbsp – Chana Dal/ Split Bengal Gram
  • 1tsp – Ginger
  • 1.5tsp – Garlic
  • 1tsp – Cumin Powder
  • 1.5tsp – Coriander Powder
  • 1/2tsp – Garam Masala
  • 1/4tsp – Amchoor
  • 5-6 – Whole Peppercorns
  • Salt
For Seasoning
  • 1tbsp – Coriander Leaves finely chopped
  • 1 – Green Chillies finely chopped
  • 1 – Onion , finely chopped

Method:

  • Blitz the above paste for 5seconds only which is more than enough for it all to mix and become a smooth paste
  • Mix into the jackfruit and put the mix away in the fridge for an hour.
  • Shape the kebab mix into flat round cutlets, spoon in a small dollop of yogurt (coconut yogurt if vegan) and shaped into balls before flattening them again into what Shikampuri Kebabs look like. Let these sit in the freezer again for another hour. Shallow fry them to a perfect char on a flat pan.

Serve with spicy coriander mint chutney, raw onion rings and lemon.

Ingredients: Tender Jackfruit, Tomato sauce(Tomato puree, Sugar, salt, onion powder, Garlic powder, onion, garlic, pepper), Tomato, Soy sauce(Soy Beans, Sugar, salt), Tamarind, Olive Oil/Sunflower oil, Herbs and Spices(Garlic, Ginger, Oregano, Black Pepper, White Pepper, Rosemary, Thyme, Garlic powder), Water, Brown sugar, Sesame seeds, Rock salt, Unrefined cane sugar, Himalayan Pink salt.
